Acorn Squash with Apples and Raisins
This Acorn Squash is easy to make and a perfect side dish to any meal.
Acorn Squash with Apples and Raisins
Serves 2
Ingredients
1 Acorn Squash
2 Tbsp light brown sugar
1 organic apple
1/2 cup golden raisins (regular raisins work fine also)
2 Tbsp butter
Directions
Preheat the oven to 450.
Make sure the squash can sit upright by trimming the ends of squash.
Cut the squash in half and scoop out the seeds.
Add 1 Tbsp of brown sugar in the bottom of each half of the squash.
Chop the apple into 1/2 inch chunks.
Sprinkle the apple chunks and the raisins in each half of the squash.
Place 1 Tbsp of butter on top of the apples.
Place the 2 halves in an 81/2 x 11 inch baking pan.
Fill the pan with about an inch of water around the squash.
Cover with pan with foil and bake for about 50 minutes. The squash should be tender so test for doneness with a fork.
