"Buttermilk" Blueberry Pancakes
Weekend morning and I am craving Blueberry Pancakes. No Buttermilk! No Problem! I never have buttermilk on hand but there is an easy way to make your own buttermilk for these delicious Blueberry Pancakes.
I have used this technique for making buttermilk so many times. I found this quick tip on the inside cover of my Fanny Farmer Cookbook where they have many gems like this one.
"Buttermilk" Blueberry Pancakes
Makes about 14 pancakes 2 1/2 - 3 inches in size
Ingredients
¾ cup milk
2 Tbsp white vinegar
1 cup all-purpose flour
2 Tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1 large egg
2 Tbsp butter melted

Directions
Preheat a skillet to 350°
Combine the milk and white vinegar and set aside while you prepare the remaining ingredients. This will thicken as the milk "sours".
In a small bowl combine the flour, sugar, baking powder, baking soda.
Use a fork to stir in the egg.
Add the milk mixture and butter. Stir to combine.
Add butter to cover the bottom of the hot skillet. Pour the batter in scant 1/4 cup measures into the skillet.
Add blueberries to the tops of the pancakes and cook until the underside has browned.
Flip the pancakes, adding butter under each pancake before you flip it. Cook until the underside had browned.
