Roasted Butternut Squash and Apples
One of our favorite Autumn side dishes but I make it all year long because it is so delicious and easy.
Roasted Butternut Squash & Apples
Preheat the oven to 350
Grease the bottom of a 13 x 9 casserole dish with butter or vegetable oil or spray with non-stick oil.
Ingredients
1 butternut squash, peeled and chopped in to 1 inch pieces
3 - 4 organic apples, chopped in to 1 inch pieces
scant ½ cup golden raisins (but I use regular raisins if I don't have golden raisins)
nutmeg
freshly ground salt and pepper
maple syrup
1-2 Tbsp butter
1 Tbsp Lemon Juice (but if you don't have it, don't worry about it)
Directions
Peel the squash and chop in to 1 inch pieces.
Chop the apples to match the size of the squash pieces.
Add the squash and apples to the prepared casserole dish.
Sprinkle the raisins on top. Eyeball how many you would like.
Lightly sprinkle nutmeg over the squash and apples.
Add a few grinds of Salt and Pepper to taste.
Drizzle maple syrup over the squash and apples.
Place small bits of butter on top of the dish.
Cover with Reynolds wrap.
Bake for 50 minutes - 1 hour.
